Smothered Chicken and Rice

Ingredients:

1 tsp onion powder              2 1/2 cups chicken broth                  1/2 tsp salt                             1/2 cup cheddar cheese

1 fresh parsley                      1 cup white rice             

1 tsp black pepper                1/2 cup parmesan 

1 1/2 tsp powdered garlic    2 tbsp all-purpose flour                      2 tbsp olive oil                        1 1/2 cup whole milk

1/4 tsp thyme                         1 tsp paprika                                        2 tbsp butter

Directions: 

  1. season the chicken breast with garlic powder, onion powder, paprika, salt, and black pepper. Heat olive oil in a large skillet and cook chicken for 5-6 minutes or until fully cooked. remove chicken and set aside.
  2. In the same skillet, melt butter. Add flour and cook for 1-2 minutes, stirring constantly to form a roux. gradually whisk in broth then add garlic powder and thyme. bring mixture to a simmer and cook until sauce thickens to desired consistency. stir in the cheddar and parmesan until melted and smooth.
  3. add the cooked chicken to the skillet. serve chicken and sauce over cooked rice and garnish with parsley.
