
Ingredients:
1 lb. ground beef
1 cup salsa
8 (8 inch) tortillas
1 (8) oz package Borden cheese, thick cut
1 (10) oz can enchilada sauce
Directions:
- preheat oven to 350, lightly spray 9 x 13-inch baking dish with nonstick cooking spray
- in a large skillet, brown ground beef over medium high heat, drain excess fat and return meat to skillet. stir in salsa and cook until heated. remove from heat
- pour about 1/2 of enchilada sauce in bottom of the prepared baking dish
- warm tortillas, add about 1/4 of meat mixture down the center of each tortilla and top with a heaping tsp of cheese. tightly roll each tortilla and place in baking dish, seam side down. pour remaining enchilada sauce over top
- tightly wrap dish in aluminum foil and bake for 30-35 minutes.
