5 Ingredient Enchiladas

Ingredients:

1 lb. ground beef

1 cup salsa

8 (8 inch) tortillas

1 (8) oz package Borden cheese, thick cut

1 (10) oz can enchilada sauce

 

Directions:

  1. preheat oven to 350, lightly spray 9 x 13-inch baking dish with nonstick cooking spray
  2. in a large skillet, brown ground beef over medium high heat, drain excess fat and return meat to skillet. stir in salsa and cook until heated. remove from heat
  3. pour about 1/2 of enchilada sauce in bottom of the prepared baking dish
  4. warm tortillas, add about 1/4 of meat mixture down the center of each tortilla and top with a heaping tsp of cheese. tightly roll each tortilla and place in baking dish, seam side down. pour remaining enchilada sauce over top
  5. tightly wrap dish in aluminum foil and bake for 30-35 minutes.
